Summary
Methods of preserving fish: drying and salting.
Fish was dried and salted. It was hung on a rope in pairs from the top of the house to dry. It was also salted in barrels. Some of the cuddies were left in a creel by the side of the house with stones on top to press out liquid - this was known as 'Cudaigean goirt'. Skate was not cooked until it had hung for a few days. Dogfish were salted for a few days and hung to dry.
