Summary
How rennet was used and an associated belief regarding hares.
When a calf was killed the stomach was kept in pickle to preserve the rennet. A spoonful would be added to warm mild in order that it would coagulate. Afterwards, the curds were placed in a cheese-press.
At one time, it was believed that if there was no rennet present in the stomach of a hare, that the hare was a witch.
